Castello di Volpaia Olive Oil is a unfiltered oil produced in Italy using a special sinolea technique. Classic Tuscan olive fruits of the Frantoio, Leccino, and Moraiolo varieties are crushed in a stone mill and then passed through the sinolea machine. Hundreds of tiny steel blades comb through the paste, gently pulling the fresh oil from the solids. The sinolea yields are low, but the oil, so delicately handled, is extraordinarily pure and low in acidity. The transparent green oil is rich in unripe tomato and artichoke aroma.
